2 Tbs. olive or vegetable oil
5 skinless, boneless chicken breast halves, cut into bite-size pieces
12 oz. jar prepared salsa (mild or medium)
12 oz. jar prepared Alfredo sauce
1/4 cup shredded or grated Parmesan cheese
16 oz. pkg. dried linguine
Shaved parmesan for topping, if desired
Heat oil in large skillet.
Add chicken. Saute over medium-high heat briefly until browned. Add salsa; reduce heat to medium-low and simmer 5-6 minutes until chicken is no long pink inside. Stir in Alfredo and grated Parmesan. Heat through until bubbly, stirring frequently. Meanwhile, cook linguini al dente according to package directions. Toss cooked linguine with chicken mixture. Plate and serve with shaved Parmesan if desired.
