Chicken Marinade


This is an easy, quick marinade which will make any chicken moist and juicy and is especially good to use on chicken for your BBQ. In fact sometimes I do only this chicken on the BBQ and everybody loves it, especially the kids! You put your chicken breasts or pieces in a bowl and add the following — Ingredients 3 large spoons of mayonnaise Juice of half a fresh lemon Good sprinkling of Herbes de Provence or mixed herbs Seasoning Generous splash of good extra virgin olive oil Mix all the ingredients together and that is it! It is ready to use but can equally be prepared in advance and left in the fridge for a few hours until you are ready to use it. Suggestions for serving are marinated chicken breasts cooked in the oven for 25 minutes (approx 180°C/160° fan) or on the BBQ. Always make sure the chicken is cooked through before eating it.     Yes i either use Herbes de Provence or Italian Mixed Herbes,and you can find them indeed in all major stores,and finally Cornwall is where i have been hiding. Thanks for watching All the best Stef

    Hi!! I’m new to cooking too and I’m trying this recipe out tonight. I have a question because I’m putting it in the oven instead…. Can I put the whole sauce in the baking pan with the chicken, or should I only put the chicken in the pan to bake? Which one gives me better results?

    Hi there! Thanks for your comment, the best results for this chicken are on the BBQ, or in the oven, but there is no reason that you cannot pan fry it – the cooking time will vary depending on the size of the chicken piece(s) you are using, but as a rule, a pan-fried chicken breast will take approx 20-25 minutes on a medium heat. As with all methods of cooking chicken, make sure it is cooked through, by testing the thickest part, before eating. All the best Stef le Chef
