    Mmm – the smells in the kitchen whilst this is cooking are AMAZING! Dish was sooo tasty – going to make next time using chicken instead – should be interesting! Served with Lauras garlic bread which was FANTASTIC!

    I made this for dinner tonight and it was soooo quick and easy to make. It was delish; I added some balsamic vinegar but other than that I followed your recipe to the T.

    I made this the day after you posted it. Wonderful, and I think I will use the roasting method to make a sausage pepper sandwich. It was easy, and no standing over the stove!

    @HellFishSC I didn’t think it was outrageous. Roasting veggies do require a good amount of olive oil. and her olive oil was coming out in a thin stream – maybe that’s why it seemed to take quite long, thus seemed like quite a lot? :)
