It’s called Salsa Verde dumplings but you will have to search to find a recipe with that name that fits your specifications.
No idea. But, it’s not Mexican. Mexicans don’t make dumplings.
This is the way I make it. This recipe serves six people.
You can make this up to two days ahead, just before making the dumplings, then reheat it before adding the topping and cooking it. Use a big heavy pan if you want to double the recipe (you will need two burners underneath).
What you need:
Boneless shredded meat from 1 big rotisserie chicken
1/2 cup all-purpose flour
1/2 stick butter
5 oz evaporated milk
15 oz salsa verde
14 1/2 oz chicken broth
For the dumplings:
3 tablespoons unsalted butter
1 cup milk
1/2 cup yellow cornmeal
1 1/2 cups all-purpose flour
1/4 cup fresh chopped cilantro
1/4 cup thinly sliced scallion greens
3/4 teaspoon salt
1 tablespoon baking powder
How to make it:
Heat the butter in a big deep ovenproof skillet over a moderate heat. You can use a big Dutch oven if you have one.
Whisk in the flour to make a paste.
Combine the salsa verde with the evaporated milk and broth and whisk this in too.
When the mixture thickens, stir in the chicken and heat it through.
Cover the pot to keep it warm.
Heat the oven to 400 degrees F with an oven rack in the lower-middle area.
Heat the butter and milk in a small pot.
Combine the baking powder, flour, cornmeal, scallions, cilantro and salt with a fork, then stir in the butter and milk mixture to make a dough.
Pinch off dough pieces and drop them over the chicken mixture.
Bring the chicken mixture to a simmer over a medium to high heat.
Cover the pan and bake it in the oven for 18 minutes or until the dumplings are cooked through.
